In the mood for something warm and yummy?! This Simple Crockpot Salsa Verde Chicken Soup is my absolute favorite recipe! I’ve made it for so many of my friends and family and I get asked all the time for the recipe. If you love your crock-pot, can use a can opener, and have a love for salsa verde…this recipe is for you!
The critical ingredient in this recipe is the salsa verde. You cannot use a standard or bland verde. If you’re local to the Seattle Area, I highly recommend Niño Blanco’s salsa verde. They pop up at most of the local farmers markets and make the perfect salsa for this recipe – especially if they’re selling their spicy verde! They make all of their salsa fresh in the mornings and bring it to the market to sell that same day. If you’re not able to get to a local market, or don’t live in Seattle, I recommend Mrs. Renfro’s Hot Green Jalapeno Salsa or the verde from Trader Joe’s is pretty good, too!

Ingredients
- 4 cups chicken stock you can also use veggie stock
- 4 chicken breasts you can add more chicken if you want a thicker soup
- 1 14 oz jar salsa verde this is the MOST important ingredient - make sure it's a verde with lots of flavor!
- 1 14 oz can white beans or bean of choice
- 1 14 oz can corn (optional)
- 1 avocado
- 1 bag shredded cheese
- 1 bundle green onion
- 1 tub sour cream or plain Greek yogurt
Instructions

Add chicken stock, chicken breasts, salsa verde, beans, and corn (optional) to the crockpot and put on low for 8 hours or high for 4 hours.

When done, add avocado, shredded cheese, green onion, and plain Greek yogurt for topping.
