On my Instagram stories the other day I asked y’all for quick and easy lunch ideas because this mama needs some inspiration! I laughed because several of you mamas replied and said “what is lunch?”, I died. LOL! But honestly, as a mom of a little one it’s really hard for me to find time to make myself something other than what Macey didn’t eat, i.e. bread crust, a few Cheerios, squished banana, cold carrot puree…you know, all the things that make up a lunch of your dreams. Sometimes I manage to pull together toast with avocado and tomato (I add hot sauce if I’m feeling fancy) but I struggle! So THANK YOU for sharing your ideas with me! I’ve tried them all and love how quick and easy they are!
1. Cranberry BBQ Meatballs. This is SUCH a good idea. Just add a bottle of your favorite BBQ sauce and a can of cranberry sauce to the crock pot, add frozen meatballs, and enjoy once the meatballs heat all the way through (roughly an hour or two in the crock pot). So good! Throw on a bed of greens or eat with some baked broccoli!
2. Frank’s Red Hot Shredded Pork, um yes! This was a quick and easy idea from an old college teammate of mine (thanks Hannah!)…and boy do I mean easy! Hannah uses chicken but I decided to try pork because I had it in the freezer. Add meat to the crockpot and cover with Frank’s Red Hot Sauce. I let mine go overnight and it was perfectly shred-able in the morning! I’ve been having it over salad with avocado and shaved almonds – but you can pretty much add whatever you have on hand!
3. Lily B’s Organic Bean, Rice, & Cheese Burritos from Costco because everything good comes from Costco. I don’t know about you but I always crave Mexican food, so it’s the best thing in the world for me to have something that takes 3 minutes to heat up in my freezer for when I literally only have 3 minutes. 😉
4. White Bean Caprese Salad from www.skinnytaste.com. Literally no cooking required but is both quick to make and healthy to eat! I don’t know about you but I almost always have a can of white beans and cherry tomatoes on hand which makes this dish easy to pull together!
5. Peanut/Almond Butter and Fruit Tortilla Roll. Y’all, when one of my girlfriends sent me this idea I was immediately brought back to my college softball days when we used to have “banana sushi” in between double headers for a quick bite of energy! I love this variation. My friend takes a tortilla, spreads on peanut butter (or nut butter of choice) and then adds whatever fruit/nuts/etc. she has on hand. Some of her favorite combinations: 1) raspberries + pomegranates 2) banana + honey 3) strawberries + maple syrup. YUM! Here’s a few other tortilla recipes for inspiration: here and here.
