My husband loves Italian food… as do I, but sometimes it’s hard to find a dish that doesn’t make you feel like you’ve eaten an entire pizza afterwards. My husband is also not the biggest fan of soup. He says it’s never filling enough. Well, he LOVES this recipe and it satisfies our desire for Italian food, while also keeping the top button of our pants in tact. π
Our favorite ingredient in this soup is the pasta. We use brown rice pasta from jovial (linked below). Guys. It’s the best! For this recipe, you can use whatever pasta you’d like, but I highly recommend giving this a try sometime.
Tonight we were looking for something yummy and warm since it’s cooled off here in Seattle. Fall is in full force and there’s nothing I love more than a body warming soup!
Start with your meat of choice (I used pepperoni), then add green pepper and lemon juice to your dutch oven (or any large pot).
Add the remaining ingredients: diced tomatoes, white wine, oregano, Italian seasoning, parsley, frozen peas, chicken stock, and white beans (everything except the pasta) then bring the soup to a boil.
Once the soup is boiling, follow the cooking instructions on your box of pasta and let simmer.
Then…serve it up! I often add more chicken stock because I prefer my soup pretty soupy – but use the ratio you like best. I just love how warm and filling this soup is and I think you will too! Plus your kitchen will smell amazing!

Deliciously Filling Italian Soup
Ingredients
- 4 cups chicken or veggie stock
- 1 cup pasta of choice I like Jovial brown rice pasta!
- 1 14 oz can diced tomatoes
- 1 14 oz can white beans
- 2 cups frozen peas
- 1 cup pepperoni, Italian sausage, or prosciutto diced I would recommend something already fully cooked to make the cooking process faster
- 1 green pepper diced
- 1/2 lemon
- 2 tbsp white wine cheap jug from Costco is perfect π
- 1 tbsp oregano
- 1 tbsp Italian seasoning
- 1 tbsp parsley
- to taste salt and pepper

Add more chicken/veggie stock as needed. Some pastas soak up a lot of the liquid.
