Deliciously Filling Italian Soup

Ingredients

  • 4 cups chicken or veggie stock
  • 1 cup pasta of choice I like Jovial brown rice pasta!
  • 1 14 oz can diced tomatoes
  • 1 14 oz can white beans
  • 2 cups frozen peas
  • 1 cup pepperoni, Italian sausage, or prosciutto diced I would recommend something already fully cooked to make the cooking process faster
  • 1 green pepper diced
  • 1/2 lemon
  • 2 tbsp white wine cheap jug from Costco is perfect ;)
  • 1 tbsp oregano
  • 1 tbsp Italian seasoning
  • 1 tbsp parsley
  • to taste salt and pepper

Instructions

  1. Add meat of choice, green pepper, and lemon juice to your dutch oven (or any large pot). Let sweat. Then add the remaining ingredients (minus the pasta) and bring soup to a boil. Once soup is boiling, follow the cooking instructions on your box of pasta and let simmer. Then.. serve it up!

  2. Add more chicken/veggie stock as needed. Some pastas soak up a lot of the liquid.
